How Hot Each Pepper Runs

Scoville heat units, with a jalapeño for comparison. Each gridline is 10 times hotter than the last.

Typical published ranges for raw peppers. The jelly is milder because sweet peppers and sugar dilute the heat.

Made From a Lab-Tested Recipe

Every jar uses Golden Pepper Jelly (opens in a new tab) from the National Center for Home Food Preservation at the University of Georgia. Tested recipes are lab-checked for safe acidity and canning time.

Never changes

  • Vinegar, sugar, and pectin: the recipe's full amounts. The vinegar is what makes peppers safe to can.
  • Canning: boiling-water processed for the recipe's time. Every lid is seal-checked, and jars that don't seal stay home.
  • Batch code on every jar.

What I swap

  • The hot pepper. The recipe calls for serrano, and its notes say other hot peppers can be used. I use the same amount of a pepper from my garden.
  • The bell pepper color. The recipe allows any color. I pick one to suit each pepper.

How long does it keep?

Sealed jars keep best for about a year in a cool, dark cupboard. Once it's open, keep it in the fridge.

Which one should I try first?

Half Aji Limón if you're careful with heat. Half Habanero if you like a kick.

Is the Half version mild?

No. Half has half the hot pepper, but Half Habanero and Half Scorpion are still hot.

What's in it?

Sugar, bell peppers, white vinegar, hot peppers, and fruit pectin. None of the major food allergens are in the recipe, but it's made in a home kitchen that handles other foods.

Do you ship?
